Energy "Lara Bar" Balls

These are SOOOO good! Almost too good... Like, I'm kinda worried I'm cheating on Whole30.  BUT these are Whole30 approved! In fact, I found the recipe on their whole30recipes instagram page.  I think the original post was from Terra_Eats_Whole (who has lots of amazing whole30 recipes fyi).  The key to anything on the whole30 diet is moderation.  Just because these are crazy good and healthy as an added bonus, doesn't mean I can veg out on these all day.  The whole purpose of Whole30 is to stop bad food habits, like habitual eating, eating when your full, eating when you crave, or just eating because your bored.  Your brain doesn't know the difference between a Lara bar and a snickers bar... all it knows is that its sugar craving was satisfied.  RETRAINING your brain to eat for fuel and not for "full" is what whole30 is all about... So, having said that... Eat these amazing goodies before you exercise as a quick energy source... OR... lets be honest... if you JUST HAVE to have something sweet, one of these is sooo much better than a snickers bar :)


2.5 cups dates (no sugar added)
1 cup raw almonds
1 cup raw cashews
Juice from 1 lime
1/2 cup unsweetened coconut flakes (and extra for rolling)
1/2 cup raisins (no sugar added)

ps... this is just a basic recipe... you can try tons of different variations like adding other kinds of nuts, raisins, craisins, etc.


In a food processor (or good blender(I used my ninja)) process nuts and coconut until they are completely chopped. Add in dates and lime juice and process until the mixture becomes "dough" like.  It won't stick together like cookie dough but when you "smoosh" it together is should stick. Stir in raisins.  Roll dough into balls and roll in remaining coconut flakes.  Store in an airtight container.  Enjoy!!!
