Chicken and Cilantro Lime "Rice" (aka Cauliflower) Bowls


Yep, Im doing it... The Whole30/ Day 1! Thirty days of nothing but whole, good for ya, foods! Im soooo excited to share this first post with you guys! This was SOO delicious! Who woulda thought that cauliflower could taste better than rice! AND I can say this because this cilantro lime "rice" is husband approved! He gave the mmm---mmm good thumbs up after devouring his bowl.  The cilantro lime/jalapeño sauce is a little spicy, so maybe limit the jala's if you aren't to much of a spicy person.  Anyways! Here's the recipe... and stay tuned for more to come!

Cilantro Lime "Rice"

-1 Head of Cauliflower
-1.5 TBS Olive Oil
-1/2 cup of Cilantro
-Juice from 1 Lime
-1 small onion
-1/2 TSP salt

Directions... 
1) Heat olive oil in skillet for 1-2 minutes (or while you prep your cauliflower)
2) Dice the cauliflower and blend in a blender or food processor until it becomes a "rice" like consistency (about 15 seconds)
3) Stir into skillet with olive oil
4) Chop onion and cilantro, and add into skillet along with the lime juice and salt
5) Cook for about 10 minutes,  stirring often.  The "rice" will be done just before it starts becoming golden brown.


Spicy Cilantro Lime Dressing
(recipe found by @Terra_eats_whole)

-1/8 cup olive oil
-1 TSP minced garlic
-1/4 small onion
-1/8 Jalapeño (optional)
-1/4 tsp sea salt
-1/4 cup chopped cilantro

Directions
1) Place all ingredients in a food processor (or a magic bullet works fantastic) and blend until it becomes a creamy dressing

Toppings

-One package/lb of chicken breasts or tenders, marinated in lime juice and olive oil, and grilled to perfection

-Half an avocado

-Half of a Tomato

The "How Too"

The Chicken was nothing special.  I did marinate it in some lime juice and a little bit of olive oil before I grilled it.  I used one package of chicken tender strips but you can use chicken breasts too.  This was enough to feed both me and my husband, and enough for lunch tomorrow! (I love it when I don't have to plan lunch the next day)

Top your cauliflower rice with chicken, avocado, tomatoes, and dressing ( I would go light on the dressing at first, and add more later).
