Salsa Lime Chicken Lettuce Wraps

Can I just say… I LOVE my crock-pot!!! Just plop stuff in it in the morning, go to work, come home and it’s done! This recipe was SUPER delicious and one we will definitely do again.  Plus there are so many different ways you could eat this, like in a taco, in a salad, in a burrito, or over rice. We have always cooked up some ground turkey and thrown them into a lettuce wrap taco but this was the first time we have tried it with chicken, and it was a hit.  Hope you like it!
Ingredients
(I only made enough for two people so you may want to double the recipe for a bigger family)
Chicken
-2 chicken breasts
-8 oz medium salsa
-juice from one lime
-1 jalapeno
-1/2 packet of taco seasoning
Lettuce Wrap Taco
-1 head iceburg lettuce
-avocado
-sour cream
-tomatoes
-cheese
-whatever else you like in your tacos :)

All of the ingredients together, ready to be stirred and poured over the chicken breasts.
Finely chop up your Jalapeno, adding the jalapeno can be optional but it really didn’t make the chicken too hot or spicy :) then mix all of your ingredients in a bowl aside from the chicken. Then just put your chicken into the crock-pot (I put mine in completely frozen… Like hard as a rock frozen) and pour your mixture over them, making sure to coat them completely.  Cover and cook on high for 4-5 hours or on low for 6-8 hours.  Once its done cooking shred it with a fork and serve it right up!

I like to use medium everything because it’s not too hot, but enough to pack a punch.

add all your toppings and you have yourself a super yummy shredded chicken lettuce wrapped taco! Enjoy!
