Chipotle Chicken Salad

I love a good salad, and I love spicy... Put the two together and I'm a happy camper.  The dressing I made was pretty good too however I am still on the lookout for a good paleo ranch dressing so if you know of one send it my way!


Chicken
-Two chicken breasts
-1/2 tsp salt
-1/4 tsp pepper
-1/4 cup olive oil
-1 tbsp chipotle powder
-2 tbsp dijan mustard (make sure its whole30 compliant)
-2 tbsp chopped fresh cilantro
-4 garlic cloves, minced
-Juice of one lime

1.  Season chicken with salt and pepper.  In a bowl, whisk together the rest of the ingredients.  Add chicken to marinade and marinate for 2 hours


Salad

-2 cups chopped romaine
-1 chopped tomato
-1/2 cup cauliflower
-1 green onion to top
(pretty much any veggies your heart desires)

Dressing

Theres no specific recipe for this dressing.  Its just two parts light olive oil, one part coconut milk, dill, dried chives, salt, and pepper to taste


"Faux"tatoes


Can it be!!! Mashed potatoes on the Whole30 diet... no, but they are pretty dang close! These were SOOOO tasty! I can't wait to try them out with a whole30 compliant gravy recipe I found.  

-1 head of cauliflower chopped into pieces
-3 garlic cloves
-2 tbsp Ghee or olive oil
-Salt and Pepper to taste

Steam one head of cauliflower and 3 peeled garlic cloves until it is soft (softer than if you were eating it as is) about 10-12 minutes. Remove cauliflower and garlic and place in food processor with butter, salt and pepper. Puree until smooth or as I like it, a bit rustic with a few lumps! Alternatively, you can use a potato masher and mash the cauliflower. Taste and season with salt and pepper, if necessary.

Paleo Granola!

People, I have hit the whole30 jackpot.  Firstly, I LOVE cereal! I can literally live off of Cookie Crisp, Apple Jacks, or my all time favorite... Reeses Cocoa Puffs! Since none of those are remotely healthy for me, I usually opt for granola with fresh fruit on top.  (AND for you SWYPO police... I never ever ever intend to give up cereal, its the one thing in the morning that makes me someone of a morning person, sooo, why not opt for a paleo version that will do my body more good than harm right?)  Anyway, try this stuff out, its super good especially with my homemade almond milk (refer to previous post)

P.S.  The only things I did differently was I added one cup of raisins, and once cup of dried cranberries (organic with no added sugar)

I also only baked mine for about 1 hour 20 minutes.

P.P.S...
I have eaten this plain! Which is delish, but you can also try it on apples with almond butter, on ice cream, or in yogurt (once your done with Whole30 of course ;))

Chicken Salad Lettuce Wraps


MMM these are so good, and so quick and easy if you need a fast lunch.  Its pretty much traditional chicken salad except your using whole30 compliant mayo.  They are definitely worth making!


-Romain lettuce
-2 cups of shredded chicken
-1 cup halved grapes
-1 apple cut into chunks
-Approx 1/3 cup of whole30 approved mayo (use nom nom paleo's recipe)
-1/3 cup chopped pecans or walnuts
-Two sticks of celery
-Salt and pepper to taste


Mix all the ingredients together (except for the romaine of course) and devour! 

Plantain Chips with Pico de Gallo



Holy Guacamole (or should I say Pico)... These are so delicious! I have @alieeatswhole to thank for these little crisps of deliciousness.  These kinda sorta taste like pita chips in a way... But I think they are way better! Eat them with a side of fresh Pico de Gallo and your in pure paleo bliss.  This whole30 business is getting easier by the day!

Plantain Chips

-4 plantains, thinly sliced
-1/3 cup avocado or coconut oil
-2 tsp garlic powder
-1tsp onion powder
-1 tsp pink sea salt
-1 tsp black pepper

1) Preheat oven to 400 degress
2) Slice your plantains super thin with a knife, mandolin, or food processor
3) Toss them with remaining ingredients in a large bowl
4) Line two baking sheets with an even layer of plantains and don't overlap them!
5) Bake for 10 minutes, flip, and five more minutes (or more depending on your oven)


Pico

-3 tomatoes
- 1/2 white onion
-half a bunch of chopped cilantro
-juice of one lime
-half a jalapenio pepper finely chopped
-Avocado (but only add this to the portion you plan on eating that day, because your avocado will go brown the next day and ruin your left overs!)
- Salt and pepper to taste

Grilled Pineapple Turkey Burgers



These were ah-mazing! So So good, like I could eat these every night kind of good.  What could be more perfect than a turkey burger sandwiched between two grilled pineapple slices topped with fresh avocado and pico de gallo? Oh yeah... Pizza (which I'm still craving!) However these are a close second.  The mayo is vegan-aise mayo from my local health food store.  Whether or not this is true Whole30 I am not sure... But it doesn't have ANY of the bad ingredients Whole30 says to avoid... and I can't find anywhere online if its bad or good... So I'm saying good, because I can't stomach eating something with a raw egg in it (although I just found out normal mayo has raw eggs in it too, yuck)

Ingredients

-Turkey Burger grilled to perfection
-Fresh pineapple slices, grilled
-Veganaise (or homemade paleo mayo, I have heard" nom nom paleo's" recipe is the best)
-Romaine lettuce leaf
-One slice of fresh tomato and red onion
-Half of a fresh avocado
-Homemade Pico de Gallo (Chopped tomatoes, onions, cilantro, jalapeƱo (to taste), and salt/pepper)
